5g baking soda (1 tsp) (to boil the bagel)
50g whole eggs, beaten (1 large) (to brush over the top)

In a bowl, mix flour, salt, and baking soda. Add in yoghurt, then continue mixing util a sticky dough is formed
Transfer dough onto a lightly floured surface, then continue kneading until smooth. Divide dough into eight equal pieces, roll them out into ropes (approx. 15-16cm long), then join and pinch the two ends together to form a circle.
Prepare water bath: in a medium saucepan, combine water, brown sugar and baking soda. Bring water to a gentle boil. Gently drop bagel dough into the boiling water and cook for 1-2 minutes or until they float to the surface (cook longer for a chewier texture). Transfer onto a prepared baking tray.
Brush the top and side with egg wash, then sprinkle the top with bagel seasoning.
Bake in the oven for 20-30 minutes till golden brown.
Whipped cream cheese:
In a standing mixer or a bowl with whisk, whip cream cheese on high for 3-4 minutes until light and fluffy. Add in milk and continue whipping for 1-2 minutes.
Assembly:
Cut bagel lengthwise, then spread with cream cheese. Additionally serve with your favourite toppings of choice.
