Banana & Choc Chip Mini Loaves with CarePantry Plain Flour

Serves: 8 loaves


Ingredients:


  • 1 cup CarePantry Self Raising Flour

  • 170g ripe bananas, mashed (2 medium)

  • 43ml neutral oil (canola, vegetable) (1/4 cup)

  • 48g eggs (1 large)

  • 120g dark brown sugar (1/2 cup)

  • 8ml vanilla extract (2 tsp)

  • 3g baking soda (1/2 tsp)

  • 2g salt (1/4 tsp)

  • 2g cinnamon, ground (3/4 tsp)

  • 109g mini dark chocolate chips (1/2 cup)

  • 100g raw sugar, to sprinkle on top (1/2 cup)

  • 85g banana, sliced diagonally (1 small)


Method:


  1. Preheat oven to 160℃ fan-forced / 180℃ conventional, grease mini loaf pans with 8 cavities, set aside. 

  2. In a bowl, mix bananas, oil, eggs, sugar, and vanilla. 

  3. Sieve dry ingredients together, except chocolate chips then add into the wet batter. Mix well, do not overmix.

  4. Fold in chocolate chips. 

  5. Pour and divide batter evenly into the prepared cavities of loaf pan, sprinkle the top with raw sugar, then place one slice of sliced banana on top for each cavity. 

  6. Bake for 15-20 minutes or until when a toothpick inserted in the center comes out clean, the bread is done. Enjoy!
